Ingredients:
1/3 cup fresh lemon juice
1 teaspoon grated lemon zest
1/2 teaspoon salt
2 cups canned chick-peas , rinsed and drained
1/4 cup tahini
2 teaspoons chopped garlic

Directions:
Puree ¼ cup of the lemon juice in a blender with the
tahini, lemon zest, chickpeas and garlic until nearly smooth.
More salt and lemon juice can be added to taste,
mixed into the hummus thoroughly.
