Ingredients:
2 hard-cooked eggs, sliced or
chopped
2 (8-inch) whole wheat or white flour tortillas
1/2 cup baby spinach leaves
1/3 cup black bean and corn salsa
1/4 cup shredded Mexican cheese

Directions:
Heat panini press to medium-high
heat according to directions.
Put one egg in the middle of each of
the tortillas. Top them with spinach, salsa, and cheese. Fold the sides of
tortillas over the filling and fold them from the bottom up.
Grill the burritos in the press
until they are toasted and the filling is heated all the way through, about 3
minutes.
Cut and serve the burritos
immediately.
