Ingredients:
2 cups white wine vinegar
1 pound of potatoes, cut into 1/4-inch slices
Flaky sea salt
1/4 teaspoon freshly ground pepper
2 tablespoons extra virgin olive oil
Directions:
Arrange the potatoes in a medium sized saucepan, and cover them with the white wine vinegar. Bring the vinegar to a boil, reduce, and simmer until the potatoes are tender with a fork, about five minutes. This way the potatoes will retain their shape later when they are on the grill.
Cool the potatoes, still in the vinegar, for 30 minutes. Drain, and lightly toss with the olive oil, salt and pepper.
Place the potatoes on the grill over a medium high heat. Grill each side for about 3-5 minutes, or until it has turned a golden color. If possible cover the potatoes while grilling. Once finished they can be seasoned with salt and pepper to taste to be served.
Serves 4.
