Living gluten free isn't easy, but it can be done with the help of some great recipes. One of my favorite foods are biscuits! These biscuits are awesome on their own or as dumplings or in a casserole.
Ingredients:
- 4 tbsp butter or margarine
- 1 1/3 cup cornstarch
- 1 1/4 tsp. Xanthan gum
- 1tbsp baking powde
- 1/2 tsp baking soda
- 2 tsp. sugar
- 1/2 tsp salt
- 3/4 milk
- 1 tsp. white vinegar
Directions:
Preheat the oven to 375 degrees.
In a medium bowl blend all the dry ingredients together, cutting in the butter. Add the milk and vinegar and mix together well. The dough will be soft.
Pat out the dough on a greased baking sheet to about 1/2 inch thick. Cut the biscuits up into squares and separate them with a knife.
Bake the biscuits for 20 mins, or until they just start to turn brown. If desired, brush the biscuits with melted butter.
Makes 6-8 biscuits depending on their size.
