Cheddar-Chive Gougeres

Ingredients:

1 cup flour
3 eggs
1 cup Cheddar Shredded Cheese
1/4 cup Parmesan Grated Cheese
2 Tbsp. chopped fresh chives
1 cup water
1/4 cup butter
Dash cayenne pepper

Directions:

Preheat the oven to 400 degrees F.

In a medium saucepan bring the water, butter and cayenne pepper to a boil over medium heat. Stir frequently with a wooden spoon. Add the flour and stir constantly until well blended. Cook and stir for 2 minutes or until the mixture forms a ball. Cool the mixture for 5 minutes.
Add the eggs to the mixture one at a time, stirring after each one has been added until it’s well blended. Stir in all of the rest of the ingredients. Spray the baking sheet with cooking spray. Drop level tablespoons of the dough mixture on to a baking sheet, about 2 inches apart from each other.
Bake for 20 minutes or until the dough is puffed and has turned a golden brown. Turn the oven off and leave the gougeres puffs in the oven for another five minutes. Serve them warm.
